Black Autumn Truffle is widely consumed worldwide, and it is popular since medieval times. These are also known as autumn truffles and in Italy they mature at the beginning of October until the end of January. They are the autumn variety of the tuber aestivum. It is easily distinguished from other truffles species by its coffee-coloured interior and intense boiled maize smell. They have a stronger flavour and aroma than black summer truffles and are black-brown on the surface. So similar are they externally to summer truffles that they cannot be easily distinguished from other truffle species. Having a more pronounced taste then of the Summer black truffle, the Black Autumn Truffle is intensely used raw with olive oil and fresh vegetables. Other Names : Tuber Uncinatum or Burgundy truffle
